Caprese Pasta {Salad}

It’s been awhile since I’ve had the chance to experiment in the kitchen, and I’m so glad I had some free time last weekend to create this dish!

Introducing the caprese inspired pasta (salad). It’s the best of both worlds: a perfect side for a summer BBQ or a delicious dinner for a date night in. This pasta dish is so light, but creamy and I can’t wait to make it again! Enjoy!

Ingredients

  • 1/4 box of spaghetti
  • 1 cup of broccoli
  • 2 cups of cherry tomatoes
  • 10 garlic cloves
  • 1 shallot, diced
  • 1/2 cup of heavy cream
  • 1 cup of mozzarella, cubed
  • 1/4 cup of chicken broth
  • 2 tablespoons of butter
  • EVOO
  • Salt, pepper, and Italian seasoning to taste
  • Drizzle of balsamic

Ingredients

  • 1 cup of broccoli
  • 2 cups of cherry tomatoes
  • 10 garlic cloves
  • 1 shallot, diced
  • 1/2 cup of heavy cream
  • 1 cup of mozzarella, cubed
  • 1/4 cup of chicken broth
  • 2 tablespoons of butter
  • EVOO
  • Salt, pepper, and Italian seasoning to taste
  • Drizzle of balsamic

Directions

Chop broccoli and add to baking dish with cherry tomatoes and garlic. Drizzle with olive oil and season with salt and pepper. Add mozzarella to baking dish with a drizzle of balsamic glaze. Bake at 400 degrees for 30 minutes.

Heat olive oil over medium heat. Add shallots and cook until fragrant. Add chicken broth and heavy cream with salt, pepper and Italian seasoning and bring to a boil, then reduce to low.

Once the cherry tomatoes & broccoli are done cooking in the oven, add directly to the sauce with all the juices. Mash the garlic and cherry tomatoes.

Once spaghetti is al dente add directly to pan with two tablespoons of butter and a sprinkle of salt. Mix together and let simmer over low. Serve & enjoy!

Caprese Pasta Salad

Ingredients

  • 1 box of pasta, I love bowtie pasta with pasta salad!
  • 1 cup of broccoli, chopped
  • 2 cups of cherry tomatoes, sliced
  • 1 cup of mozzarella, cubed
  • 1/2 cup of EVOO
  • 1/4 cup of red wine vinegar
  • 1/2 teaspoon of salt & pepper
  • 1 teaspoon of oregano
  • Basil and balsamic glaze to top

Directions

Mix everything but the pasta into a bowl. Top with vinaigarette. Once pasta has cooked, let cool or run under cool water and add to dish and toss. Finish with a sprinkle of basil and a drizzle of balsamic glaze over the top. Enjoy!
